It really only keeps for an hour or so, so it has to be eaten right away. Its a case by case basis (I personally am too sensitive to tolerate canned food)<br /><br />If you used canned tomatoes, I would only use a little bit and drain most of the liquid away. Vinegar would be mostly unnecessary because the citric acid and other preservatives (not all are listed on the ingredients list) in the canned food is already very acidic. The recipe is designed to provide a tomato-like sauce that replaces tomatoes because of the natural high acidity or because of intolerance/allergy to tomato entirely. It uses a few small fresh ones for those who tolerate tomato to expand the taste and round it out. Using organic tomatoes will likely be much more nutritious and higher quality than canned tomatoes (and less salt!), according to the recent government studies last year based on mineral density in organic versus non-organic. Its just that the human body is SO complex that chances are some of the root causes are in your own biochemistry, anatomy, physiology, and genetics/proteomics. <br /><br />This diet may be helpful to you, so if you think it may be, than definitely give it a shot! For me, I have found (and observed) that spending years going from one diet to the next just causes misery and frustration. Luckily, my biochemistry/molecular biology background gives me enough leverage to be able to look at the raw data in the foods and design my own diets. Likewise, I have found targeting the missing links in my detox pathways and doing what I can (mostly via trial and error) to help reduce bottlenecks has improved my diet immensely. <br /><br />Instead of focusing on what I CAN'T have and how I am ALWAYS miserable, I chose to accept that I will always feel sick one way or another and i was no longer going to let it affect me. Millions of people live each day with starvation and horrendous diseases and pain, yet they care for families and are often the happiest people on our planet. I chose to be one of them! I am consciously cultivating an attitude of gratitude and living a life of simple abundance. Plus, a little bit of hunger makes me all the more thankful for 1200 calories worth of plain white rice each day!<br /><br />Skepticism is healthy and useful. But you always have options, even if they are options you don't like. It only takes one to make a difference in your life, no matter how small. If you have several available to you, I would say I am jealous! Don't think of it as running out of options... rather think of it as joy that you have options that are waiting for you to explore! Hence, why salicylate sensitivity is idiopathic. <br /><br />Amines actually are a chemical that forms is all meats and fermented foods. The older the substance is, the more amines that are there. Very interesting blog -- very well written...Hello,<br /><br />Very interesting blog -- very well written, especially for someone dealing with salicylate/anxiety issues.<br /><br />I'm going through the same extreme reactions depending on what I eat, and so have been examining the various 'diets'. I don't mean diet in the traditional sense at all, because I need to GAIN weight. I've had CFS for 13 years now and have lost muscle the past six months.<br /><br />Anyway, looking back on some of your November posts, I noticed that you (I think on Day 2 of the sal diet) you were actually eating quite a bit of high-salicylate foods. The veggies -- can't remember them now, but that could've caused some problems.<br /><br />Also, (again, there are so many different diets out there recommending conflicting advice) but perhaps you might need to cut down on certain types of carbs and/or grains for awhile, as they can feed/stir up the bad bacteria, which can increase H2S levels, which then lead to leaky gut, etc.<br /><br />I haven't tried either yet, but friends are recommending both the SCD diet, and also the GAPS diet. The SCD seems to be getting the best or fastest results, but the GAPS diet (with healing bone broths, etc) seem to really help heal the gut, so that one can eventually go back to eating a much wider variety of foods.<br /><br />It's my understanding the salicylate problems stem from (hello!) basically eating way too many high-sal foods for too long -- so that the liver doesn't have the factors needed to detoxify them -- like glycine and sulfate, etc. So backing off for awhile allows those levels to build up, and the sulfation pathway works better...<br /><br />As for amines -- it's again my understanding (I'm certainly not a doctor) but my understanding that amines form on 'old' meat -- leftovers, etc. , and that fresh meat is actually low in amines.<br /><br />???<br /><br />Anyway, just my two cents. The best book is Gary Taubes's "Good Calories, Bad Calories: Fats, Carbs, and the Controversial Science of Diet and Health," but you can find articles he wrote and not have to buy the book.<br /><br />Going paleo is a logical progression for a celiac. You don't need bread or dairy alternatives.
